Food with a view at Chez Bison near Zion

Forget Antelope Island, if you really want to go where the buffalo roam, head to southern Utah for dinner at Chez Bison.

Customers at the fine-dining restaurant at Zion Mountain Ranch just east of Zion National Park often catch a glimpse of the buffalo that resides in a large preserve nearby. They can see the herd through the main dining room window as well as from the rooftop deck.

Chez Bison recently received an update, with communal tables, wood salvaged from the ranch's property and pioneer backcountry accents. Everyone at the restaurant had a hand in the redesign— from the chopping and sanding of wood to the hanging of lights. The leather accents were created by the ranch's horseback tour guide, and the chairs were re-upholstered by a mother of one of the waiters.

Owners say the new look is a better fit for Executive Chef Shon Foster's menu that includes farm-fresh produce grown on the ranch as well as free-range chicken, Kobe beef and sous vide pork. Entree prices range from $20 to $35
