The South Asian version is hearty and sophisticated at the same time with its comforting heft and clever use of freshly ground Indian spices.
Die-hards know that goat's flavor is totally different than that of lamb - deeper, gamier and suited to the spice-sultry, terra cotta-hued sauce. It's simmered until tender, bones and all, to coax out every bit of flavor. This result is worth the slightest extra effort.
