You can't help but be giddy when presented with a half-dozen of these warm ping pong ball-sized orbs at Spruce. Rather than powdered sugar that you'd most likely spill down your front, these morsels are rolled in granulated sugar. You can dip the beignets in either the velvety crème anglaise or the plum-raspberry preserve provided. I like to eat them plain.

Spruce is at 2100 Frostwood Drive (in Dakota Mountain Lodge beneath The Canyons), Park City; 435-647-5566. Hours are daily, 7 to 11 a.m.; 11:30 a.m. to 2:30 p.m.; 5 to 10 p.m. Bar menu, 11 a.m. to 10 p.m.
