Looking for a holiday splurge? Market Street Fresh Fish Markets in Salt Lake City, Cottonwood and South Jordan are selling two different varieties of caviar that have been sustainably produced in the United States.
The Royal Transmontanus Caviar comes from white sturgeon, native to California. Tins cost between $70-$280. (1.06 ounces to 4.4. ounces)
Classic Transmontanus Caviar, is similar to the Royal, but smaller and darker gray. It was heralded as "both bold and lush" by Departures magazine. Tins cost between $55-$225 (1.06 ounce to 4.4 ounces).
Larger tins (up to 35.2 ounces) may be ordered 48 hours in advance.
The caviar is imported by Petrossian, which introduced caviar to Paris the 1920s.
