Last chance for Market Street's holiday caviar

The Market Street Fresh Fish Markets are still offering American-grown caviar for the holidays — so foodies have only this weekend to buy a tin.

The varieties are sustainably produced in the United States: Royal Transmontanus Caviar from white sturgeon native to California; and Classic Transmontanus Caviar, which is similar to the Royal except smaller and a darker gray.

The Royal runs from $70 for a 1.06-ounce tin to $280 for a 4.4 ounce tin. The Classic goes from $55 to $225 for the same sizes.

Sales have been "pretty good," said Judy Cullen, communications director for the Gastronomy restaurant group, which owns the Market Street markets.

Cullen said she's heard little feedback from customers, which could be a positive sign — because, she said, Market Street's customers don't hold back if they are unhappy with the fish.

"We're operating under the assumption that everybody is quite happy with the product," Cullen said.
