Tom Call, who is the new chef for the Trio Restaurant Group, has been quietly working behind the scenes for several months.
But he hit my radar last week as one of the contestants in a local culinary competition called 'Chef War." He won the event by creatively using bacon in a salad; a basil pesto over salmon and with pork loin.
A graduate of the California Culinary Academy, Call interned in Italy and has worked the past 10 years in some of San Francisco's top-rated restaurants including Campton Place, Aqua, One Market and Coi.
In his new position, the 29-year-old will divide his time between the Trio restaurants in Salt Lake City and Cottonwood as well as Fresco Italian Cafe.
He's definintely one to watch.
