Learn more about biodynamic wines during a special dinner on Friday, Feb. 24, at Faustina, 454 E. 300 South, Salt Lake City. It begins at 6:30 p.m. and costs $35 per person. Optional wine pairings are an additional $20.

Katrina Fetzer, from Ceago Biodynamic Wines, will talk about the self-sustaining vineyard in Clear Lake, Calif. Everything needed to sustain the farm comes from the property. There are animals to provide fertilizer; and orchards and other crops to help control insects. The method improves the soil and plants and ultimately grows better grapes for wine.

Faustina's Executive Chef Billy Sotelo will created a special four-course menu to complement the Ceago wine selections. The menu and pairings include:

• Open-faced shrimp ravioli, with chardonnay reserve

• Red pear salad with blood orange vanilla vinaigrette, with syrah rose

• Pleasant Creek hangar steak with Italian kale, celery root puree, with cabernet sauvignon

• Roasted apple tart with honey vanilla gelato, with muscat
