Shave ice truck a fixture in Holladay

Day 2 of our quest for cool summer treats took me to the Island Flavor Shave Ice truck for a frozen hot chocolate. The green-van-turned-food truck has been a fixture on Holladay Boulevard for the last seven years.

After living for a while in Hawaii — where food trucks are everywhere — owner and Utah native Brad Butler wanted to start a similar business back home. Butler said he saw the run down van parked in a field. The owner said it had been there for many years and for only $300 Butler could have it.

After some repairs and remodeling to meet health standards, the van has been a favorite summer stop from May through mid-September.
