Throughout the month of August, Tribune writers are tasting our way through some of Utah's finest frozen confections including ice cream, gelato, frozen yogurt and shave ice in an effort to beat the heat. Today's pick:
Bear Lake Raspberry Shake • Made from ice cream and crushed Bear Lake raspberries never syrup. Freezing the berries prolongs the goodness through the summer.
LeBeau's Drive-In • Home of "famous raspberry shakes," 69 N. Bear Lake Blvd., Garden City. Just north of the intersection of U.S. 89 and Bear Lake Boulevard. 435-946-8821. Open 8 a.m. to 10 p.m.

Shop talk • Owner Renae LeBeau and her husband bought the drive-in in 1981. She also owns LeBeau's Too across the street. LeBeau says the secret to Bear Lake shakes is the raspberries grown there are a variety called "candy." It's a summer business that's open only five months a year. LeBeau employs 29 mostly college students to staff the drive-ins and Sweet Shop, which sells gifts, chocolates, taffy and jelly beans. You can also buy Honeyville chokecherry jelly, syrup and honey among other confections.
Besides the shakes, LeBeau's does a brisk business in hoagie sandwiches, hamburgers and fries. LeBeau's Special sandwich is a quarter-pound of hamburger, cheese and ham for $6.99 and don't forget the fry sauce. The place offers picnic tables where families can enjoy their treats under cool shade trees.
