Throughout the month of August, Tribune writers are tasting our way through some of Utah's finest frozen confections including ice cream, gelato, frozen yogurt and shave ice in an effort to beat the heat. Today's pick:

Chocolate-chocolate chip ice cream • At Nitro Freeze, they not only serve you ice cream, they make it in front of you first with a frigid blast of liquid nitrogen. There are 10 ready-made ice-cream concoctions from the "Berry Blast Off" to the "Minty Way," but you can ask them to concoct any specific variety from 26 flavors and dozens of toppings. You also get to start off by choosing ice cream, custard, frozen yogurt or non-dairy cream.

Cost • Small $3.49; medium $4.59, large, $5.69, with one mix-in. Additional mix-ins, 49 cents.

Shop talk • Similar to Sub Zero, another Utah ice-cream store, Nitro Freeze takes flavored cream and gives it a healthy shot of liquid nitrogen in a mixer while it's mixing. The ice cream is then softened a bit with warm water and churned by hand before it's served. The result is a creamy delight and a fun and quick course in ice-cream production.
