Blue Lemon to open first out-of-state location in 2014

Blue Lemon, a Utah-based restaurant company, will open new locations in Sandy and Gilbert, Arizona in early 2014, officials announced Tuesday.
For the Sandy location, Blue Lemon will construct a new 5,000 square-foot building at 11372 S. State St., near the Scheels sporting goods store.
The company will remodel an existing building in Gilbert, making it the company's first out-of-state location.
Blue Lemon, which serves artisan sandwiches, salads and other fresh-made items, opened in Highland in 2009. Since then owners Lychelle and Aaron Day have expanded the business, opening stores in downtown Salt Lake City and Cottonwood Heights.
