$29 • The kitchen at Vuz Restaurant & Vuda Bar works wonders with high-end Kurobuta pork.

Rather than searing it over high heat, Vuz braises the pork. This slow-cooking method renders the meat fork-tender, and the juices imbue the accompanying white beans with rich pork flavor.

Baby golden beets and steamed asparagus add color, and a nubbin of goat cheese gives the dish some punch.
