Corinne • In the late 1800s, shortly after the Transcontinental Railroad was completed, this tiny Box Elder County town became a transfer point for goods heading to Montana mining towns.
As a major stop, the population grew to more than 1,000 residents and became one of the state's wildest towns as railroad workers and freighters patronized some 15 saloons and 16 liquor stores.
Things have changed since then. Today, the only full-service bar in Corinne is Mim's Bar and Grill, a watering hole for bikers, locals and tourists that boasts about having "the coldest beer in Utah."
"It's friendly, fun and unique," said Brenda Holley, of Roy, who took a weekday road trip with her husband, Craig. "Look around. It has its own flavor. You want to come in and want to stay."
The bar can get crowded, especially on Sunday afternoons when Wasatch Front motorcyclists descend. Wednesday is free pool night.
Cindy Guzman, who purchased the business from her brother-in-law about 12 years ago, said in the 1940s the bar, on the road to the Golden Spike National Historic Monument, was named Murph's.
It was later named after Mim Davis, who turned a heavy piece of wood from the Promontory Bridge into the signature black-painted bar.
At one time, Playboy centerfolds decorated the rafters. Those are long gone. Now there's an eclectic mix of beer signs, along with a few pool tables, a shot-glass collection, big-screen televisions and a grill where cheeseburgers are the specialty.
Supreme Meats in Brigham City follows a special seasoning recipes just for the patties, which are served on a fresh sesame bun for $4. Grilled onions and mushrooms can be added for $1; there's a small charge for the fries, but they are worth it.
The menu also includes a chicken sandwich, hand-cut fries, tater tots, onion rings, nachos, chili and a few appetizers to go with the beer and mixed drinks. On Fridays, Guzman also offers New York steaks that come with a baked potato or fries and a roll for $12.
"I come here for the food and the company," said Jim Parker of Wellsville. "It's just a grill that's been seasoned for a lot of years."
