A Boulder, Colo.- based restaurant chain is following up on its success at two Utah locations by opening two more, a company spokeswoman said.

"It's been unbelievable how customers have taken to us in Utah," Noodles & Company spokeswoman Kelly Pascal Gould said Monday. "Both neighborhoods [in Sugar House and Murray] have been some of the best we've entered."

On Wednesday, Noodles & Company will open a third location at 700 E. 400 South, Salt Lake City. The fourth restaurant will open Sept. 8, at 6900 S. 1300 East, Midvale. The chain has 92 locations nationwide.

Though Noodles & Company made its name offering noodle entrees ranging from American comfort food such as macaroni and cheese and Stroganoff to Asian-inspired dishes such as Japanese pan-fried noodles, a new menu introduced this month spotlights salads and "noodle-less" items featuring beef and seafood. The marketing adjustment is a nod to the low-carb diet craze, Pascal Gould said.

"The new menu gives people more choices and makes it easy to make a decision when they dine with us," she said. "It's all about balance."

Founded in 1995, Noodles & Company directly operates restaurants in nine states that employ 3,000 workers. The company has recently signed franchise agreements to build 141 restaurants throughout the United States.

The new Utah locations join restaurants at 1152 E. 2100 South, Sugar House, and 5300 S. State St., Murray.
