Lowfat oatmeal cookies

I found another recipe on Pinterest.com that our family really enjoys: Lowfat Oatmeal Cookies. The recipe is from Taste of Home magazine (Go HERE to get it). I modified the recipe a bit. No one in our house likes raisins, so we left those out:


1 cup all-purpose flour

1 cup quick-cooking oats

1/2 cup sugar

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

2 egg whites (I've made this recipe with egg whites and with whole eggs and I can't tell the difference.)

1/3 cup corn syrup

1 teaspoon vanilla extract

1/3 cup raisins (I've made this recipe without the raisins and I've made it by substituting pecans or some other type of nuts or even chocolate chips.)

Combine all the ingredients (except for the raisins, nuts or chocolate chips) in a medium bowl and mix well. Stir in raisins, nuts or chocolate chips. Dough will be stiff and sticky. Drop by tablespoonfuls onto baking sheets that have been coated with cooking spray. Bake at 375° for eight to ten minutes or until lightly browned. Makes two dozen to two and a half dozen cookies, depending on the size.
